Shapeshifting refering to shifter and druid abilities to change their shape, those change does not affect regular shapeshifting spell such polymorph self. Shifter have a enhanced item merging, that allow all properties to stack and have their AC type respected. A monk doesn't receive wisdom AC bonus while shifted considering they can already reach high AC. However monk keep their AC bonus every 5 level.
